Gold Rush
The Gold Rush is a classic cocktail that is a favorite of mine. It’s made with just bourbon, lemon juice and honey syrup – ingredients that I always have on hand. The finished drink is just sweet enough to take the edge off the bourbon, very refreshing and a vibrant gold color.
It seems like it would save a few minutes off prep time to use honey instead of honey syrup, but you really need honey syrup to get the best results in the recipe. Honey alone does not incorporate easily into cold drinks. It gets too thick to shake into a cocktail as soon as it comes in contact with ice, so diluting it slightly into a syrup allows you to use it to sweeten a Gold Rush or any other cocktail that needs a splash of honey.

Ingredients
2 oz. Bourbon
3/4 oz. Lemon Juice
3/4 oz. Honey Syrup
Pour all of the ingredients into an ice filled shaker. Shake until chilled and welll combined. Strain into a chilled glass and serve.
